Sautéed Balsamic Mushrooms

Growing up I was NOT a mushroom fan. As I got older my mom started adding them to her stew chicken and stew beef and I was hooked. There is just something about nice steak or stew that pairs well with mushrooms. Lately me and Nick have decided to cut down on rice and bread and add more veggies and fruites to our daily meals.

One of the things I love about vegetables is that the recipes and combinations are endless. If you follow me on instagram then you’ve heard me express before that Im a veggie girl. Picky with fruites but vegetables I’ll eat them all.

I wanted to share my quick sautéed Mushrooms because I feel its a perfect addition to add to your veggie sides recipes, its quick, and its tasty. Most of the ingredients I used you most likely have them in your Kitchen right now.

 

Ingredients                                                         Prep Time: 25 mins           Serving 2-3 people

  • 3 cloves Garlic
  • 2 lbs Mushrooms
  • 1/2 tsp Thyme
  • 2 tbsp Balsamic vinegar
  • 1 tbsp of olive oil
  • 1 tbsp Soy sauce
  • pinch or sea salt
  • pinch of freshly cracked pepper
  • 1 tbsp of fresh parsley

Instructions
Make sure your mushrooms are throughly cleaned. In a medium non stick skillet sauté olive oil, minced garlic and thyme for 30 seconds. Add mushrooms and stir until garlic and mushrooms are coated. Add soya sauce and balsamic vinegar. Coat mushrooms and cover for 2 mins. add pinch of freshly cracked pepper and sea salt. stir well until mushrooms  are at the consistency you like. I like the soft but still firm. place in serving bowl wait until partially cooled and top with fresh parsley.
