Orzo Mediterranean inspired salad

I love an easy and quick salad.  I love a salad that I can make for lunch or for a side dish for dinner. Orzo Salad is one of my Favs especially for a summer bbq or a lunch for work. Today I’m sharing my quick recipe for orzo salad. One of the biggest changes I’ve made to my health and budget was making lunch at home vs ordering out. Most likely you already have the ingredients at home so why not make it to your liking.

I can’t tell you many times I’ve went out and ordered a salad and got home and its soggy or not the way I pictured it. I prefer making my salads at home that way I can customize it how I want.

 

 

Prep Time: 25 min                    Serving: 2-4 people

Ingredients

2 cups of orzo pasta cooked

1/2 cup of cucumbers

1/2 cup of cherry tomatoes

1/2 cup of feta cheese

1/3 cup of red olives

1/3 cup of chopped red onions

1Tps of cracked pepper

1Tps of Kosher salt

1 Tps of oregano

2 Tbps of olive oil

1Tbps of fresh Lemon juice

Instructions 

Cook orzo pasta according to the package directions, the one I bought (Misko) called for 13-15 mins. Once Orzo is cooked and chilled add to a large bowl. Add you’re vegetables olives and and spices.
