White Bean, Tomato Feta salad

Three years ago I was in the best shape of my life and I intend to get back there by just following exactly what I did then with some tweaks. I lived on salads and lost my weight basically having a diet that consisted of greens, beans and some protein. I wanted to share one of my go to salads that I make for my lunches and for my family that is healthy, quick and tasty. Guarantee you may have at least half of the ingredients in your kitchen as you read this.

Ingredients

1 Can of white beans (rinsed thoroughly)  

Cups of cherry tomatoes (halved ) 

2 tbps of olive oil or extra virgin

1 tbps of red wine vinegar

1 teaspoon of minced scallions 

A pinch of kosher salt

1/2- 1 cup of greek feta cheese 

1/2 cup of chopped fresh parsley

2 tbps of dried or fresh oregano

Instruction

Step 1: In a large salad bowl add beans, tomatoes, scallions.

Step 2: In a separate bowl whisk together oil, vinegar, salt and pepper.

Step 3: Pour over whisk vinaigrette together beans tomatoes and scallions, coat well.

Step 4: Once coated add feta cheese, parsley and oregano.

Step 5: Give another stir and voila. If you need to add ore salt or pepper do so to your liking.

Leftover salad if any (wink) can be stored up to two days.
