Bean salads are one of the most easiest and delicious salads. Beans are so customizable and packed with tons of protein. I love 6 bean melodies but sometimes a simple white bean salad is my go to. You can always have the beans alone or add a few veggies like cucumber and tomatoes. I wanted to share my go to white bean salad I like to make, when I need a quick lunch or a nice side dish with a meal.
Prep time: 20mins Serving 2-4 people
Ingridients
one can of white bean or mixed beans
half of an english cucumber (cubed)
1/4 cup of red pepper cut in squares
1/4 cup of yellow pepper cut in squares
1/3 cup of red onions cut in squares
1/3 teaspoon of fresh chopped garlic
1/4 teaspoon kosher sald
1/4 teaspoon of black pepper (I like freshly grounded)
1/3 cup of fresh herbs (I use either dill, cilantro or fresh parsley)
1/2 cup of Olive oil
1/3 cup of redline vinegar
Instructions
In a large salad bowl combine beans and veggies mix till evenly combined. In a separate bowl add oil, vinegar, pepper and salt whisk until combined. Once the vinaigrette is made pour it in the bean mixture top with fresh Herbs. Mix until bean, vinaigrette and herbs are evenly combined. If your a cheese lover you can of course add feta cheese.
I like to pair this salad with tuna for lunch so yummy
