Easter Table
Easter is a special holiday in my family growing up christian. Not only for the religious aspect but the tradition and spring in it self symbolizing new beginnings. Every year before good Friday I remember my mother always going on a cleaning and decorating frenzy right before. The smell of fried fish, pepper and incense in the air was the aroma, smelt a lot like the islands. Some of these traditions I have adopted and implement in my own family.
Under normal circumstances my siblings and I would off all gathered by my Moms but with the Corona virus that did not happen this year. Still keeping the sprit up I decided to make our dinner a little fancy. I wanted to keep it bright and pink of course. Our menu consisted of Jamaican escovitch fish, brown rice, sauce, broccoli, coleslaw, salad and some wine.
