Banana Bread is one of my favourite desserts. My Aunt Carmel Hands down makes the most delicious banana bread. I am not a baker I just love the idea of baking. For my kids I will still try to bake even if my cookies comes out too hard. My kids and hubby are always supportive and boost me up even when I know none of them will be eating the goods.
While searching endlessly on Pinterest for quick and simple recipe I found and adapted this one just a bit from Simply Recipes
Prep time: 15min 20 with kids Cook time: 40-45 mins Makes: 1 loaf
Ingredients
2-3 very ripe bananas (look for black spots are the best)
1/4 cup of melted unsalted butter
1tsp of baking soda
1 1/2 cup of all purpose flour
pinch of salt
1/2 cup of sugar
1 large egg or 2 regular sized eggs
1tsp of vanilla extract
Instructions
Step 1
Mash Ripe bananas in a bowl mash until smooth but not all lumps are gone. Pour in melted butter to the mashed Banana mixture.
Step 2
Add baking soda and salt. Then stir in sugar and beaten eggs to the mashed bananas and butter.
Step 3
Add your flour to the banana mixture and mix until flour is no longer visible and semi smooth
Step 4
Butter your loaf pan I used my ceramic loaf pan from Samantha Pynn
add mixture to your pan . Insert into already preheated oven at 350 degrees and bake f0r 40-45 mins I like my banana bread/loaf some what moist.
Step 5
let cool and stand for 10 mins before slicing. I sliced on a wooden cutting board with a brand knife.
