Lately in my home, we have been changing what we eat. Being raised in an all Jamaican home I grew up on food from the islands and lets face it; as good as it taste, it can some what be unhealthy at times. Personally I’m a chicken lover and enjoy a nice steak every once in awhile, but lately I’ve been cutting out the meat all together. I will not claim to be a vegetarian but what I can say is my home is on the “eat green and clean”path.
The other day I made a Jamaican inspired fried rice and I though I would share it for all you foodies out there…
You can adjust the recipe to your liking but don’t leave out the ginger and scotch bonnet pepper(Jamaican cooking secret ingredients)
Ingredients
- 2 cups of cooked rice(I used parboiled rice) use whatever you prefer
- 1/4 cup of asparagus heads
- 1/4 cup of red peppers(chopped)
- 1/4 cup of green peppers(chopped)
- 1/4 cup of corn
- 1/4 cup of carrots(chopped)
- 1/4 cup of onions
- 1 teaspoon of chopped fresh ginger
- 1 teaspoon of chopped fresh
- 1 teaspoon of scotch bonnet pepper
- 1 teaspoon of dried thyme
- 1/3 cup of soy sauce (I use the VH reduced sodium)
- Cap of white vinegar
Directions
sauté fresh ginger, garlic scotch bonnet pepper together for 5 mins
Add carrots and sauté for 2 mins
Then add all other vegetables saute for 5 mins
Add 2 cups of rice stir together with vegetables saute for 5 mins
Add salt and pepper to your taste
Add soya sauce and a cap full of white vinegar and keep stirring
Simmer on stove add a teaspoon of butter
30 mins and your done!
